My recent visit to Xin Cuisine Chinese Restaurant at the Concorde Hotel Kuala Lumpur was a delightful journey into the timeless traditions of Chinese cuisine. Xin Cuisine Chinese Restaurant, the signature Cantonese dining proudly unveils a new line-up of classic signature dishes that celebrate the timeless traditions of Chinese cuisine. Leading the kitchen is Master Chinese Chef Foong Ah Kwai, who brings with him more than 50 years of experience in Cantonese cooking keep traditional recipes alive, bringing out the familiar tastes of home.

A delicacy speciality from Guangdong province, China and this dish pays homage to authentic Cantonese culinary tradition. The goose is marinated with a blend of soy sauce, herbs and spices before being slow-roasted over several hours to achieve crispy skin and tender meat.
Served every Friday, Saturday and Sunday, while weekday orders require three days’ advance notice.

A true showcase of traditional craftsmanship, this dish requires a meticulous six-hour process. Pork tripe is thoroughly cleaned and stuffed with a whole farm chicken, then gently simmered for three hours to allow the flavours to meld.
The broth is stewed for another three hours with stewing hen, chicken feet, ginkgo, yuzhu, shallots and pepper. This creates a collagen-rich soup with a distinctive gelatinous texture and peppery warmth — a dish that reflects both patience and heritage in Cantonese cuisine.
