Hey! I was recently invited to attend a media sneak taste preview – a behind-the-scenes if you will – to discover what is so special about the upcoming Guinness Flavour By Fire Festival. Yes, the Guinness festival is back and it’s happening this 18-20 August at Sentul Depot, KL and 2-3 September in Fort Cornwallis, Penang.

Back to the tasting preview, it was a real pleasure to have celebrity chefs Sherson Lian and Johnny Fua take us through a 3-part fire-grill and Guinness infusion masterclass to explain to us how these 2 elements are responsible for taking good food beyond the ordinary.

After going through this immersive taste experience, it’s true; fire-cooked makes a world of difference to the dish, and when you add Guinness to the ingredients it really tantalises your taste buds to a whole new level.

The tasting session revealed that both flame-cooked dishes and the fire-roasted barley used in making Guinness share the ability to create exceptional flavours. The unique taste experience you get from combining Guinness with flame-cooked foods is truly unmatched.

First Chef Sherson showed us how the Maillard reaction in fire-grilled foods transforms the taste and aroma. I suppose that's why many people love the charcoal-fired char koay teow and other hawker “char” dishes.

We tasted fire-cooked vs electric-cooked beef and lamb - seasoned with only salt and pepper. And clearly, the taste difference is remarkable.  In fact, Guinness knows this best - their barleys are fire-roasted at 232 degrees Celsius. I guess that’s why Guinness has a rich, distinctive flavour!

Then Chef led us to taste two different barbecue sauces - one with Guinness infused and one without. Wow – talk about beyond the ordinary.

The finale! We got a taste preview of what you can experience at the festival - Guinness-infused chicken char siew. It was simply amazing, so flavourful. Folks, this is what it's about, let me tell you the festival is one that is NOT TO BE MISSED!

Here are the 11 culinary partners who will tantalise your taste buds with fire-grilled meats, seafood and even desserts, at the festival this 18 - 20 August at Sentul Depot, KL. So come and bring your friends, too:

1. From Arthur’s Storehouse, Guinness Malaysia’s flagship partner outlet, Chef Franky and the team have prepared a wholesome menu including their signature Guinness barbecue ribs, and an authentic Irish favourite – Guinness Irish stew!

2. Rock & roll celebrity chefs Johnny Fua and Sherson Lian of Kitchen Mafia return with a delectable menu with a new signature dish – Guinness Sticky Lamb Ribs!

3. Big Boyz Barbecue by culinary innovator Chef Navin Karu will be grilling a scrumptious and exciting combo of Guinness-infused ‘Burgers & Dawgs’.

4. Yat Sing Smokehouse brings their American style smoked spare ribs, pulled pork sliders, and bacon mashed potatoes, all flavoured and infused with Guinness!

5. Kao BBQ will serve an all Guinness-infused Korean Dakkochi, signature Lamb skewers, and Korean Pork skewers.

6. Shucked Oysters & Seafood Bar (Southern Rock Seafood's sister company) will serve two Guinness-infused flame-cooked dishes – grilled tiger prawns and grilled salmon.

7. Chef Suren of Tipsy Boar will be firing up three unique Guinness-infused dishes, including the not to be missed slow-roasted pork belly porchetta with Guinness chilli kicap. 

8. Undisclosed Location pays tribute to the marriage of Asian and Mexican flavours with their flame-cooked roast beef taco with Guinness Marmite sauce and a Guinness Chocolate Fudge cake for dessert.

9. TNR by Sean & Angie will raise the bar with a Guinness-infused signature char siew dish and a complementary Guinness sauce. 

10. Not-to-be-missed desserts include Guinness chocolate fudge and Guinness Magyum ice cream by Undisclosed Location and Caketella respectively, as well as two varieties of Guinness bacon popcorn and Guinness chocolate cookies from Bacon It.
