Have you try Nasi Ulam Nyonya? Actually cooking this dish is not difficult but the preparation takes a lot of time and patience. Getting all the herbs and ingredient, after that slicing and chopping them. Nasi means rice in Malay while ulam means the assortment of herbs served during meal. Nasi ulam nyonya is the herbs are sliced or chopped and mixed with rice and other ingredients.

The aroma of the different herbs, paired with rice and dry-toasted shredded coconut or kerisik, dried shrimp and fish floss (serunding ikan) arouse my appetite. It is delicious, aromatic, healthy and appetizing. If you are vegetarian then do not add the dried shrimp, fish floss and belacan powder. I like the combination of spicy, tangy and aromatic flavor.

Our dinner: Fresh cucumber, tomato and carrot salad, nasi ulam nyonya, ayam goreng berempah (spiced fried chicken), sambal udang kering terung (spicy dried shrimp brinjal) and sambal belacan mangga |
Nasi Ulam Nyonya Recipe:
Ingredient 1
3 cups of Jasmine Royal Siam fragrance rice
3 lime (limau kasturi) juiced
100gms dried shrimps (soak, chopped, fry & cool)
100gms serunding ikan (fish floss)
1 teaspoon belacan (shrimp paste) powder
100gms kerisik (toasted and pounded grated coconut)
Salt, sugar and grounded black pepper to taste
Ingredient 2 (Finely
chopped or sliced):
1 fresh turmeric (Kunyit)
6 small shallots (Bawang Merah)
6 small chilli (cili padi)
2 stalk lemongrass (Serai)
1 stalk torch ginger flower (Bunga Kantan)
6 kaffir lime leaves (Daun Limau Purut)
12 polygonum leaves (Daun Kesom)
15 mint leaves (Daun Pudina)
15 basil leaves (Daun Selasih)
10 wild betel leaves (Daun Kaduk)
Garnishing:
cucumber (sliced)
tomato (sliced)
mint leaves
Preparation:
1. Cook rice. Leave it to be fully cool. Make sure the rice
maintain the grain shape but still soft.
3. Mixed the kerisik, serunding and fried dried shrimp
4. Toss all the ingredients 1 & 2 evenly and serve
